Breakfast: fruity smoothie
Prep and measure the fruits and veggies today, put them all in a single container in the freezer. In the morning, put it all in the blender, with the milk and yogurt. You'll have a nutritious breakfast in a couple minutes.
This salad will be even better tomorrow, if you make it today. You'll have enough for lunches for a couple days this week.
Snack: two bean dilled hummus
Make this hummus today, to serve as a snack or appetizer this afternoon. Leftovers will make a great snack tomorrow and a sandwich spread later in the week.
Supper: tater tot casserole
My tater tot casserole recipe takes a while to bake, but not long to put together. If you know you'll be busy tomorrow evening, you can make it today and bake it it, without the tots. Tomorrow, add the tots and throw it in the oven until the tater tots are golden brown.
Dessert: trail mix cookie bars
A cookie bar that is packed with nutrition. It can double as breakfast, a snack, or a great lunch time dessert. You can make them today and serve them tomorrow. Of course, they don't take long to put together. You could make them while the casserole is baking and have a fresh, warm dessert after supper.

Joe is going to be late a lot now that he is starting a new business venture so to solve the problem of me being pissed off when he doesn't make it home for dinner, I can make whatever I want without really keeping him in mind. Very liberating, especially on the meatless front.
