Remember yesterday when I posted a recipe for vegan Almond Joy candies? Well, I couldn’t leave well enough alone, so I made chocolate ice cream and mixed in the candy, along with some salty, toasted almonds. Yummers!
Almond Joy Ice Cream
2 cups semisweet chocolate chips
2 cups chocolate almond milk
1/4 cup granulated sugar
1 tsp vanilla extract
2 cups of bite sized almond joy pieces
3/4 cup chopped, toasted, salted almonds
Melt the chocolate chips over low heat in a double boiler. Warm the almond milk in the microwave. When the chocolate is melted, slowly whisk the warmed milk into the chocolate. Add the sugar and vanilla and stir until the sugar is dissolved. Chill the chocolate mixture in the fridge for 6-8 hours, or overnight if possible. Freeze the ice cream in your ice cream maker, according the machine instructions. Add the candy and almonds right before the ice cream is completely frozen.
