A Little About My Day and a Recipe Without a Photo

Ever have a day that went from meh to amazing in the blink of an eye? That was today for my girls and me. Our day was going to be no big deal, just laundry, cleaning and maybe a walk to the park. But that all changed when my mom called and invited us to go to the museum and the wildlife sanctuary with her, Auntie Sarah and Auntie Cathy. Suddenly I was packing for a day out and about, and getting the girls in the car. We played at the museum, went down the dark and scary otter slide about a million times and fed the geese. My sweet girls were so happy.

By the time our day of adventures was coming to an end, Veronica and Clarissa were exhausted. Asleep before we were out of the parking lot exhausted. I drove home and transferred my little ones to their stroller. They never even opened their eyes as I took them out of their car seats and strapped them into the stroller. It was magical. I walked for an hour, zig-zagged around the neighborhood, going up every hill in the area. When I was sufficiently worn out and the girls were waking, I headed home and made supper.

Our dinner tonight was delicious and nothing that requires a recipe. I sauteed some mushrooms and Gardein Beefless Tips, which I served with roasted sweet potatoes, roasted cauliflower and coleslaw. Is it weird that I think about coleslaw almost everyday? I love it so much. I already have plans for coleslaw grilled cheese sandwiches for lunch tomorrow. Since I don't have a recipe from our meal today, I'll share one from a few days ago. I don't have a photo. The night I made these burgers, we were so hungry that we scarfed them right down. There was no time to take proper photographs. It was like a feeding frenzy at my kitchen table that night. Picture or not, here is the recipe. You'll just have to trust me and imagine how delicious they are.

Black Bean Burgers
1 box silken tofu, drained
1 can of black beans, drained and rinsed
2 tbsp Braggs
2 tbsp dill pickle relish
black pepper
2 tbsp millett
2 tbsp chives
2 tbsp parsley
2 tbsp nutritional yeast
2 tbsp tomato paste
1 cup panko

In a medium sized bowl, mash the tofu and beans with a potato masher. You want to leave the beans a little bit chunky, to give the burgers great texture, but smash them enough so the starch will help hold them together. Stir the remaining ingredients into the tofu and beans. Form into burgers and cook. These can be baked in the oven, grilled, sauteed in a little olive oil. You know, however you normally prefer to cook a burger.
