I'm having trouble writing today. The girls and I have a miserable cold. Again. I have a wicked sinus headache and we've gone through an entire box of tissues today. All I want to do is sleep, but somehow, my little gals have plenty of energy to run around and make messes. So I have to pretend to have energy to clean up those messes and keep the little ones happy.

The cold kept me from making supper tonight, so I don't have a dinner recipe to share. Baking cookies yesterday hindered my supper making. I mean, I made a pot of chili, but I doubt you need another chili recipe. Instead of posting a recipe, I'll give you a little update on the cookbook. So far I have 17 recipes completed, which run the flavor gamut: chocolate, peanut butter, citrus, dried fruit, ginger, nuts, coconut, banana and mint. I delved into the world of gluten-free baking and ended up baking the best chocolate cookies I've made in a very long time. I mastered an easy and wonderful vegan version of the Girl Scouts Thin Mints. It is possibly the best cookie recipe I have ever created. I have three more cookie ideas mapped out and ready to be made when the illness passes. I'm aiming for a total of 40 recipes, so I'm just about halfway there. Yahoo!

I've also submitted a project proposal to www.kickstarter.com for funding for my cookbook project. The online, e-book publisher I'm working on right now formats for iPad and iPhone. If I get funding, I'll be able to hire someone to format my book for all e-readers. I'll also be able to hire a photographer and a cover designer. Wish me luck!

And wish me luck that I'll be over this cold very soon. One day of not baking and I am chomping at the bit to get back in the kitchen. I spent much of the day thinking about banana-blueberry bundt cake. The bundt pan hasn't been in the oven for almost a week. What's a girl to do?

ReplyDeleteWould you mind sharing that gluten free chocolate chip cookie recipe. We are gluten free in my house and always looking for yummy cookie recipes. Still haven't found a chocolate chip one I love.
Thanks Kate! I wish I could share my gluten free cookie recipes, but they are going into my book, which should be coming out in late fall or early winter. Keep an eye on the blog, though. There will be a way to get a recipe of your choice from the book coming soon!

Thanks! I have worked through five more recipes since this post. I am well on my way to being done with the recipe development portion of the writing. It will be such a relief when it's done.
